Leaping off the rock.

January is a great time to start something new. For us it’s finally time to take that leap of faith and bring a long-time dream to life: Big Rock Beef.

Raising quality cattle on our farm definitely isn’t something new. Jarrod is a third generation producer on this farm situated in the rocky Ozark Hills and hollers. Learning the ropes with his parents and grandparents, Jarrod started his own herd from just one Christmas-gift heifer while still in high school. With an abundance of care and determination he grew the herd into a well-established cow-calf operation. Farm activities include retaining replacement heifers, selling bulls and providing beef for family and close friends. He has always dreamed of offering quality, hand-raised beef to a wider audience. And so began Big Rock Beef.

Like many cattle ranchers, Jarrod strives to finish our beef for great taste and value. We know these animals - I mean we really know them. They are born here in the spring or fall and remain at their mother’s side until weaning. We love to see the calves jumping, bucking and chasing around in the grass pastures. They nurse and learn to eat grass right alongside their mothers. Daily interaction with the herd is essential, keeping them safe, healthy and growing,

Jarrod and I live here amongst them. At times I can look out any window and see happily grazing cows. We use rotational grazing to keep the grass growing, the fields rested and the land sustained. When the cattle are off in our other pastures, (just over the hill,) I miss them! Thankfully, it is never too long until I see black dots on the green hillsides again from my kitchen window.

Think Small

In a world where bigger isn’t always better, we think small. Just like making a small batch of really good bourbon takes quality ingredients, and a slow and careful process, Big Rock Beef is raised with personal attention to detail. Calves are hand-selected at weaning for Big Rock Beef. Less than a dozen animals make the cut. This small batch of animals graze our pastures and are provided daily grain until it’s time to butcher. Happy, healthy cows living their whole lives on one farm, with one owner makes one excellent product.

So here we are, in the midst of a pandemic, taking a leap of faith. As my mom said - people still need to eat. True. Oh! And if you’re wondering about that Big Rock. It’s in our driveway watching over all who come and go and the cattle, too.
